Ingredients and spices that need to be Take to make Chanar Dalna (Bengali Cottage cheese and potato curry):

  1. For making chana ball or kofta
  2. 1 liter full fat milk
  3. 2 tbsp vinegar
  4. 2 tbsp maida
  5. Pinch salt
  6. For making Dalna or curry
  7. 2-3 medium sized potato cut into medium size diced
  8. 1 tomato finely chopped
  9. 2 dry red chillies
  10. 1 bay leaf
  11. 2 ginger
  12. 2-3 green chillies
  13. 1 cinnamon sticks
  14. 2 cloves
  15. 2-3 cardamoms
  16. 1 tsp kasmiri red chili powder
  17. 1 tsp turmeric powder
  18. 1/2 tsp cumin powder
  19. 1/2 tsp coriander powder
  20. 1/2 tsp garam masala powder
  21. 1/4 tsp sugar
  22. 1 tbsp ghee
  23. 1 tsp cumin seeds
  24. as per taste Salt

Steps to make to make Chanar Dalna (Bengali Cottage cheese and potato curry)

  1. 🔸To make chana ball or kofta:- Boil 1-liter full-fat milk in a pot, when milk comes to boil turn off the flame and add vinegar to hot milk. When milk curdles, drain the cuddle water in a cloth or strainer. Run the strainer under fresh water and hang it for 1 hrs.
  2. After 30 minutes remove the chana to a plate, knead it well and add maida and salt with the Chana and knead well to make a smooth dough out of it. After that make the lemon size balls from that chana dough.
  3. Now heat a pan with oil. Then fry all the kofta balls till it gets the nice golden brown color. Soak in warm water for 5 minutes. And keep it aside.
  4. Now To make Dalna or curry Take a blender jar add ginger, green chilies and blend it well to make a smooth paste.
  5. Take a bowl add all powder spices mix well and then add with ginger chili paste. Mix it well with 1 tsp water.
  6. Heat a pan with oil fry the potato till those turn golden brown and keep it aside.
  7. Temper remaining oil with bay leaf, dried red chili, whole spices, and cumin seeds and cook for 1/2 minutes and then add chopped tomatoes and cook for 2-3 minutes in low flame till raw smells of tomatoes completely emit. Now add ginger spices powder paste to the pan and mix properly and cook for 3-4 minutes.
  8. Add sugar and salt to the mixture and add 2 tbsp water as well and cook till oil separatess from the mixture.
  9. Now add the fried potatoes mix it and then add 2 cups of water mix well. cover it and cook for5 minutes or until potatoes become soft On low flame.
  10. Remove lid and add chana kofta and green chilies mix well and cook for another 3-4 minutes.
  11. Switch off the flame add garam masala powder and 1 tsp ghee to the gravy and mix properly. cover it and rest of 5-7 minutes before serving.
  12. Serve it hot with white rice.
