- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 tsp red chilli powder
- 1 tbsp mustard oil

- In a bowl marinate the mutton with yogurt, ginger-garlic paste, red chili powder, and mustard oil. Cover the bowl with a lid and marinate for 1-2 hours.
- Now in a pressure cooker heat oil. Add bay leaf, green cardamom, cinnamon, and cloves. After a few seconds add thinly sliced onion and sugar. Cook it for 3-4 minutes until golden in color.
- Now add marinated mutton, ginger garlic paste, red chilli powder, coriander powder, and salt. Cook for five minutes.
- Now close with a lid and cook on low flame for 6-8 minutes.
- Now open the lid. Check if the mutton has released water. Now increase the flame and cook the mutton for 10-15 minutes Add garam masala powder. Stir continuously.
- Once all the water evaporates and oil started releasing from the mutton. And the color becomes dark then add one cup of hot water and mix well.
- Pressure cook the mutton for 2-3 whistle or continue to cook until the mutton has fully cooked. And the gravy becomes thick.
- When the entire dish looks dark brown in color and looks like oil oozing thick meaty gravy kind of thing. The mutton kosha is ready.
- Turn the flame off. Pour the mutton into a serving bowl. Serve with paratha or rice.
