Dahi-Vada is my favorite recipe. Whenever I go to a restaurant, my first order is always Dahi-Vada.

Ingredients and spices that need to be Take to make Dahi Vada (urad dal):

  1. 1/2 cup Urad dal
  2. 1 green chilli chopped
  3. 1 tsp ginger chopped
  4. as per taste Salt
  5. as required Oil for deep frying
  6. 3 cup Hot water for soaking vada
  7. 1/4 tsp salt
  8. 1/8 tsp hing
  9. 1 1/2 cups chilled thick Curd (fresh/ homemade)
  10. 1/8 tsp black pepper powder
  11. 1-2 Tbsp Sugar (sweetened as prefer
  12. as per taste Salt
  13. As per taste Kashmiri red chilli powder as per required for sprinkling
  14. as per taste Chaat Masala as per for sprinkling
  15. 1/4 cup Tamarind Chutney
  16. As required Green Chilli Sauce or green chutney

Instructions to make to make Dahi Vada (urad dal)

  1. Soak urad dal for 4 to 5 hours or overnight. Then drain water from urad dal.
  2. Add urad dal, green chillies, ginger, salt and a little chilled water (2 to 3 Tbsp) as required in a mixer jar and grind to make a thick and fluffy batter. Remove the batter in a bowl and Whisks it for a minute.
  3. Heat oil in Kadai. Once the oil is hot enough, pour spoonful of batter into the hot oil and fry well until golden and crisp on both sides. Keep the gas on medium flame while frying.
  4. Drain off the vada over kitchen paper to remove excess oil.
    Take 3 cup of hot water in a bowl, add 1/4 tsp salt and 1/8 tsp hing in it. Soak all hot fried vada in water for 15-20 minutes, until the vada absorbs water and become soft. Rotate them with spoon in between.
  5. After 15- 20 minutes, remove all the vada from the water. To remove water out of vada, press each vada very gently.
  6. Take curd, tamarind chutney and green chilli sauce or green chutney.

  7. To make Sweetened Curd:-
    Add black pepper powder, sugar and salt in 1 & 1/2 cups of curd. Whisks curd until smooth. Combine well.
  8. Take serving bowls. Place 2/3 Vada and then pour sweetened curd over it. Then add 1 tsp green chilli sauce or green chutney. Add 1 Tbsp (I.e. 3 tsp) tamarind chutney over it.
  9. Sprinkle red chilli powder and Chaat masala over Dahi-Vada.
    Serve Dahi-Vada chilled and enjoy it.
